Summer is upon us! This weekend, get outdoors and appreciate some great food.
Check out these ribs cooked Alpha style. Minimal fuss, perfect if the boys are coming over, or the family need a good feed.
Don’t insult them with cheap sausages and white bread buns. Gaze into the infinite possibilities of char-grilled heaven.
LOTS of Pork Ribs (preferably organic, free range)
Thumb sized piece chopped ginger
4 crushed garlic cloves
3 Table spoons of fruit jelly and a squirt of runny honey (less if watching carbs, more if you like ‘em sticky, or this is post training!)
Chopped fresh chilli to taste (we like ‘em HOT!)
Glug of balsamic vinegar
Glug of Worcester Sauce
Salt and Pepper to taste
(I don’t do precise marinades!)
Leave to infuse overnight if possible, and then cover in foil and cook in the oven at approx 150 degrees for around 90 mins.
The beauty of this method is that you can pre-prep the ribs and just finish them perfectly over the coals when needed.
Prep your BBQ for cooking over an indirect heat. For the trainee BBQ warrior, this involves arranging your coals just to one side of the grilling area (the sugar in the marinade will burn and turn black if you flame grill these bad boys)
Ideally, sprinkle some damp oak chips or similar over the coals prior to cooking (the smoke adds an extra dimension of flavour)
Cook to your liking, brushing with the marinade often. I like the outside nicely caramelised.
Goes great with…Greens!
If you have a hot plate, or an all metal pan thats BBQ proof, stir fry some kale in grass fed butter (that's Kerrygold if you are in the UK) and season to taste. Best dished up as it starts to crisp under the heat.
If you’re going to drink…at least pair good pork with something that will do it justice. My call, an ice cold Hazy Hog from the esteemed Hogs Back Brewery in Tongham. (Hint: If you are on a fat loss mission this stuff is a six pack destroyer, stick to iced water with plenty of fresh lemon juice!)
Lastly. Totally optional, but definitely best served with lots of banter and good company.
