High Protein, Blueberry and Dark Chocolate Paleo Pancakes
Its breakfast time. You've decided today isn't a day to 'Intermittent Fast', and you just don't feel like yet more eggs.
On chilled out, weekend mornings, even the most disciplined of minds can start fantasising about baked goods to go with a great coffee.
On one of those days, this Blueberry and Dark Chocolate Paleo Pancake is your saviour!
You'll get around 45g's of protein, a lot of fat and not many carbs (approx 10g's). Its also gluten free. Perfect!
Ingredients:
100g's Almond Flour
3 large free range eggs
1 tsp mixed spice
1/2 tsp ground cinnamon
Splash coconut milk (until desired consistency is achieved)
Two cubes of 85% Dark choc, broken into pieces
As many blueberries as you can fit in!
Table spoon of coconut oil for cooking
One lime
Skills (minimal!):
Whisk ingredients together, get the oil hot in the pan and add the mixture. The only potential issue here is a tense freehand flip, as the pancake will almost certainly fall apart if you try to manually turn it with a spatula. It adds to the experience!
Drizzle with half of the lime juice and serve with the other half to add as required.
I'll smash a whole one of these, but do bear in mind this is a calorie bomb, so depending on your goals, a half of one may suffice.
Goes great with...
Strong black coffee. A premium Kenyan roast, brewed straight up, served black and strong. It adds another layer of flavour to the lime, berries and dark chocolate.
Ok, so this mornings effort isn't so aesthetically pleasing. But it tasted... amazing! Warm blueberries bursting in each mouthful, with dark chocolate melting in every bite, and the fragrant spices giving you an after kick of flavour.
What is more, being low in carbs, this pancake doesn't give you that big serotonin hit that inevitably follows the usual wheat flour based versions. So I still feel alert and ready to take on whatever the day may bring. It also gluten free, so avoids the bloating and brain fog many people get with gluten laced foods.
